Ray stevens' mexican casserole


Ingredients

1 lbs Ground beef
1 Onion, chopped
1 tsp Salt
1/2 tsp Black pepper
1 Bell pepper, diced
1 pack Taco seasoning mix, 1 ¼ oz
16 oz Tomatoes with juice
8 oz Tomato sauce
16 oz Chili beans, drained
1/4 tsp Dried marjoram
1 Bay leaf
1/2 lbs Sharp cheddar cheese, shredd
Tostito corn chips
Pitted black olives, for
Garnish


Directions
  1. Saute ground beef with onion until no longer pink; drain fat and season with salt and pepper.
  2. Mix with the meat the tomatoes, sauce, juice, taco seasoning mix, diced pepper and beans.
  3. Add marjoram and bay leaf, and saute for 3 minutes more.
  4. In a casserole dish spread half the tostitos on bottom, layer half the meat mixture and sprinkle half the cheese on top. Repeat the layers. Bake in 350F deggree oven until hot and bubbly.
  5. Suggestion: Serve with shredded lettuce, chopped tomatoes, black olives, sour cream, jalapeno slices or salsa.
