Avocado And Spinach With Papaya Salad Recipe

Ingredients

• Dressing:
• 1/2 cup olive oil
• 2 tbsp red wine vinegar
• 6 tbsp orange juice
• 2 tbsp lime juice
• 1 tbsp ground cumin
• Salt and pepper to taste
• Whisk all together.
• 1 1/2 pounds spinach
• stems removed
• washed and dried
• 2 ripe avocados
• peeled
• pitted and sliced 1/8 inch thick
• 1 medium sized papaya
• peeled
• seeded and diced into 1/2 inch cubes
• 1 red onion
• thinly sliced
