Dried Fruit Cookies Recipe

MASH 2 large or 3 medium bananas until smooth. STIR in 1/3 cup peanut oil, 1 teaspoon vanilla, and 1/8 teaspoon salt. ADD 1 1/2 cups rolled oats, 1/2 cup oat bran for hot cereal (fine cut), 1 1/2 cups chopped mixed dried fruits (raisins, dates, apricots, peaches, etc.) and 1/2 to 3/4 cup chopped nuts. DROP by rounded tablespoon onto greased cookie sheets. Flatten slightly. Bake at 350 degrees for 20 to 25 minutes or until bottom and edges are lightly browned. Cool on wire rack. Store in tightly closed tins in refrigerator.
