Fruity Tootie Orzo Recipe
Tagged in Vegetarian
Directions
1. Use a juicer to juice and apple and a lemon (one each
per serving)
2. Pour the juice into a saucepan, mixing in a little vegan sugar
cane juice if you'd like.
3. Add the (cooked) orzo and remains of the juice (the pulp
and flesh that the juicer "spits out") into the saucepan.
4. Sautee over medium heat until some of the juice has
evaporated; make sure you leave a little at the bottom
though.
5. Transfer to a bowl, sprinking/mixing in some poppy seeds
for crunchiness and prettiness.
6. Chill 'till serving. Garnish with lime wedges. Best
when served poolside with pita and hummus, vegetable kabobs
and frozen margaritas.
