Potato Bacon Salad Recipe

Directions
In a large bowl, combine potatoes, green pepper, red onion, and bacon; set aside.
In a small bowl or jar with lid, blend mayonnaise, mustard, vinegar, parsley, garlic powder, and oregano. Pour over potato mixture, tossing to coat well.
Cover and chill at least 2 hours.

- 2 pounds red potatoes
- cooked and cut into chunks
- 1/2 cup green pepper
- chopped
- 1/2 red onion. Sliced thinly
- 6 slices bacon
- cooked and crumbled
- 1/3 cup mayonnaise
- 1/3 cup Dijon mustard
- 2 tbsp red wine vinegar
- 2 tbsp parsley
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
