Directions
To prepare this Chicken Forcemeat, (White) Recipe, first prepare the meat according to general directions, by chopping, pounding and rubbing through a sieve. Boil the bread, mace and cream together until they are cooked to a smooth paste, about ten minutes; then take from the fire, add the butter, then the meat and seasoning. Beat whites of eggs well and add the last thing. Test to make the texture right and set away to keep cool until wanted.
