Chinese Soup with Smoked Pork and Ginger, simple to make.

Directions
In a Wok bring your cups of stock to the boil, when the stock is there, drop in the pork, peas, chives and ginger. Let the mixture cook for a couple of minutes, keeping it on the boil. Add the Smoked Pork.
Give your eggs a quick beat until they are very mobile. Stream the egg into the stock slowly from a height, or drizzle in quickly with a fork, egg cooks immediately.
Once all the egg is in the stock, stir in a clockwise rotation for around a minute. If you would like 'slivers' of egg, stir very rapidly, if you prefer thin ribbons stir the mixture slowly.
To serve, dish out into soup bowls and garnish with some raw chives and crackers.
Optional: Use cooked ground beef instead of smoked pork and add chopped green chilli and fried onion to make west side beef soup instead.

- Salt and Pepper
- Grated Ginger (Optional)
