Easy Peasy Jacket Potatoes with a twist....lots of cheese and bacon!!

Directions

Pre-heat oven to 180 degrees First microwave the Jackets for 15-20 minutes in the microwave, this cuts down cooking time in the oven and saves energy!
Add salt to the Potatoes....the more the better, the salt withdraws moisture, creating a fluffier potatoe. Then place in the oven for another 20 minutes, until cooked and crispy.
When cooked allow to cool, or dive straight in but watch your hands!
Cook the bacon till crispy and chop into small crunchy bits.
Cut the potatoes in half and dig out the actual potato into a large bowl, leaving the skin in tact and save the skins.
Add the cream cheese, half the grated cheese, the bacon bits and season to taste with salt and pepper. You can add as much or little cream cheese as you want or add cream. And mix this all together.
Get your skins and carefully fill them with the mixture.
Top with the remaining grated cheese and bake and/or grill until crispy and golden.
I tend to eat mine with baked beans and sometimes salad....ENJOY!!

Ingredients

  • 4x Jacket Potatoes - Roughly equal sizes.
  • 4-6 Rashers Bacon
  • Dollop of Cream Cheese
  • Good Pile of Grated Cheddar Cheese - however much you enjoy cheese!
  • Salt/Pepper
